Employee and Guest Safety Protocol

A guide to keeping your employees and guests safe.

Overview

We’ve included a general overview of what these safety protocols entail as well as links to resources to help you think of specific ideas on how to make these changes. 

• Develop and implement your COVID policy and strategy: How will you document COVID situations, such as employees calling out sick? What will you do if/when an employee tests positive? Or is in contact with someone who tested positive? How do you handle paid sick leave? Memorialize this scenario planning & documentation process so that you or anyone else in the restaurant know exactly what to do when a COVID situation arises. You can find info on how to develop this strategy in this section as well as the Reopening Logistics section.
• Train and practice proper sanitation practices: Ensure that your team is equipped with the proper protective and sanitation equipment. Multiple times throughout the day, employees should be sanitizing high-touch surfaces such as door knobs and knife handles. This section will provide you with ideas and templates on how to organize this sanitation program.
• Practice social distancing for guests and employees: Develop ways to ensure 6 ft is kept between all employees and all guests at all times of the day. This might include limiting the number of guests allowed inside, putting tape on the floors to indicate 6 ft, and staggering employees’ schedules to limit the number of employees working at one time.
• Develop ways to ensure contactless service: Think about all of the times an employee or guest has to touch something communal, whether it be cash, condiments, or opening doors using door handles. Where possible, make changes to your operation to limit contact with these high-touch surfaces. ​

Coronavirus Guide for the F&B Industry

• Summary: Provides several template checklists to be used before reopening and during operation to ensure proper cleanliness and sanitation practices. This tool is created by a UK-based consultant, so some information might not be applicable to your specific restaurant. 
• How to Use This Resource: This is a guide put together by industry professionals, organized by Vaughn Tan, in the UK and translated into several languages.

• Summary: This page provides several templates for various operating procedures, as well as general information about coronavirus. In particular, this page provides the company’s internal scenario planning that outlines how to treat different types of COVID situations. 
• How to Use This Resource: Use the templates provided to get started on your own sanitation checklists and standard operating procedures. 

ReOpen Hospitality: Reopen Guide by Timeline

• Languages: English
• Summary: Provides templates and specific examples for sanitation and COVID policies. In particular, check out the Cleaning Protocols and Supplies page for information on what/how/when to sanitize surfaces. Also check out their Writing Your COVID-19 Policy page for a template and best practices on how to communicate this to your employees. This resource has also been posted under “Reopening Logistics”. 
• How to Use This Resource: Use this tool to organize when to start each phase of your reopening checklist. Some of the cards will also have templates of documents they recommend having in your restaurant. 

Black Sheep Restaurants: COVID-19 Playbook 

• Languages: English, Japanese
• Summary: Provides general tips on proper hygiene for both employees and guests, with a focus on how to promote social distancing in a full-service sit-down restaurant. It also includes helpful tips on how to save costs through proper menu planning. This resource is from a Hong Kong-based company; therefore, some recommendations may not apply to US businesses and might actually violate US laws or regulations (such as having guests fill out a health declaration form before dining). 
• How to Use This Resource: Use this resource to brainstorm ways to promote proper hygiene, social distancing, and cost savings in your restaurant.
